INGREDIENTS
 

  • 2 1/2 cups broccoli, frozen 

  • 2 cups cauliflower, frozen 

  • 1/2 leek, copped 

  • 4 cups + 3 tbspwater 

  • 1/2 cup cashews 

  • 1 vegetable stock cube 

  • 1 tbsp oil 

  • herb salt 

  • 7 ounces asparagus 

  • oil, to fry 

 

TOPPING

Roasted almonds - green herb oil

 

INSTRUCTIONS

 

  • Put all the gut healthy ingredients in a saucepan. Let it boil for 10-15 min or until the green veggies and the cashews are soft. 
     
  • Fry the asparagus in some oil and salt until it’s golden. 
     
  • Mix the soup all together. Taste!

  • Pour the amazing soup into bowls. Top with asparagus, roasted almonds & green herb oil. ENJOY!
