INGREDIENTS

 

  • 3 tbsp of melted coconut oil
  • 3 tbsp of coconut sugar
  • 2 tbsp of almond milk (at room temperature)
  • 2 tbsp of gingerbread spices*
  • 2 tsp of baking powder
  • 1/2 tsp of vanilla extract
  • 1 ½ cups of chickpea flour 

 

*If you don’t have a gingerbread spice blend, you can make your own using a mix of ground ginger, cinnamon, nutmeg, allspice, and cloves. 

 

INSTRUCTIONS

 

  • Preheat the oven to 350°F.
  • In a bowl, whisk together the melted coconut oil and coconut sugar. Add the almond milk, gingerbread spices, baking powder, and vanilla extract. Stir until the mixture is smooth.
  • Add the chickpea flour and stir until smooth again.
  • Line a baking sheet with parchment paper. Roll the dough into 10 balls and gently flatten the tops with your hand.
  • Bake for 8-10 minutes, or until golden. Remove from the oven and let cool.
  • Enjoy right away, or store in an airtight container for a healthy snack – perfect for when unexpected guests drop by!
