Recipe: honey-fermented strawberries

INGREDIENTS

1 ½ pints of fresh strawberries
¼ cup of honey
¼ cup of liquid whey (a byproduct from dairy production that you can buy or make at home)

INSTRUCTIONS

  • Use fresh strawberries and start by removing the green tops. Then cut the berries into quarters.
  • Place them in a clean jar, leaving some space at the top.
  • Mash the strawberries with a wooden spoon, then add the honey and whey.
  • Close the lid and leave the jar at room temperature for three to five days. Be sure to stir it twice a day.
  • Once you see bubbles, taste it to see if it’s to your liking. For a stronger flavor, leave the jar on the counter for longer.
