INGREDIENTS
- 3 tbsp of melted coconut oil
- 3 tbsp of coconut sugar
- 2 tbsp of almond milk (at room temperature)
- 2 tbsp of gingerbread spices*
- 2 tsp of baking powder
- 1/2 tsp of vanilla extract
- 1 ½ cups of chickpea flour
*If you don’t have a gingerbread spice blend, you can make your own using a mix of ground ginger, cinnamon, nutmeg, allspice, and cloves.
INSTRUCTIONS
- Preheat the oven to 350°F.
- In a bowl, whisk together the melted coconut oil and coconut sugar. Add the almond milk, gingerbread spices, baking powder, and vanilla extract. Stir until the mixture is smooth.
- Add the chickpea flour and stir until smooth again.
- Line a baking sheet with parchment paper. Roll the dough into 10 balls and gently flatten the tops with your hand.
- Bake for 8-10 minutes, or until golden. Remove from the oven and let cool.
